Nitrate intoxication caused by vegetables consumption is an unusual cause of methemoglobinemia in infancy. The skin colour becomes blue and the Hb desaturation can be fatal. We report the case of a 7-month girl who was intoxicated by chards and two additional cases in which the condition was caused by carrots or by well water. A high index of suspicion is the most important factor in diagnosis.
